      Chunky Apple Bake

      Ingredients

      1 lb cooking apples
      3 oz whole wheat bread, without crusts
      1/2 cup cottage cheese
      3 tbsp light brown sugar
      7/8 cup low-fat milk
      1 tsp sugar

      Preparation

      1. Preheat the oven to 425°F Peel the apples, cut them in quarters and remove the cores.

      2. Roughly chop the apples into even-size pieces, about 1/2 in across.

      3. Cut the bread into 1/2 in dice.

      4. Toss together the apples, bread, cottage cheese and sugar.

      5. Stir in the milk and then spoon the mixture into a wide ovenproof dish. Sprinkle with the sugar.

      6. Bake for 30 - 35 minutes, or until golden brown and bubbling. Serve hot.
