      Pinot Noir:

(pee noh nwahr)—A tricky grape to grow, Pinot Noir makes some of the best wines in the world. The prototype wine is red Burgundy from France but Oregon, California, New Zealand, and parts of Australia also produce good Pinot Noir. The wine is lighter in color than Cabernet or Merlot with relatively high alcohol, medium-to-high acidity, and medium-to-low tannin. Its flavors and aromas can be very fruity or earthy and woodsy, depending on how it is grown. It is rarely blended with other grapes.

      Willamette Valley:

Stretches from Portland in the north to Eugene in the south. A majority of the Willamette Valley vineyards lie on the foothills of the Coast Range that forms the western edge of the valley.

      Dundee Hills:

The Dundee Hills AVA is Oregon¹s first micro AVA as of one year ago and is over 80% "Jory" soil-type. This special volcanic soil has excellent minerality and drainage. Also, the Dundee Hills benefits from being drier and warmer than many pockets that surround it. All of these factors together combine to showcase unique characteristics found in the best Pinot noirs from this region. Our wines tend to be very focused with great clarity and complexity. Some of the descriptors are bright red fruits, exotic spices, and a gorgeous minerality in the structure.

      Alsace:

(ahl zas) Just across the Rhine River from Germany, this region in northeastern France produces wines that are unique in many ways. They are made with grapes native to Germany; their bottles are graceful and long-necked; they are relatively inexpensive; and their labels carry the names of the grape as well as the place-name. Alsace Riesling is far drier than its German counterpart, although it has a fruity aroma. IT can be enjoyed young, but a good Riesling will age and improve for ten or more years. Alsace Pinot Blanc is a light-bodied wine that can be extremely dry or medium-dry. Tokay Pinot Gris is made from the Pinot Gris grape, known more famously in Italy as Pinot Grigio. In Alsace these wines are rich, spicy, and full-bodied and a good match with spicy meat dishes as well as sweet and sour flavors. In Alsace, the Gewurztraminer grape makes wines that are spicy, intense, low in acidity and high in alcohol.

      Pinot Grigio:

(pee noh GREE joe)—also known as Pinot Gris, is grown mostly in northeastern Italy but is also found in Germany (where it is called Rülander), Alsace, Oregon and California. It is deeper in color than other white grapes and has a medium body and low acidity.

      Cafe Hash Browns

      Rated

      Ingredients

4 medium potatoes (white rose or red)
4 tbsp bacon fat, vegetable oil or butter for frying
      1/8 teaspoon salt
      1/8 teaspoon pepper

      Preparation

Cook potatoes unpeeled in boiling water just until they are tender. Drain and set aside at least four hours, or preferably overnight, in a cool place (do not refrigerate).

To prepare, peel potatoes and coarsely shred them, adding salt and pepper. Heat the fat in an iron frying pan. Make sure the pan is hot before adding potatoes or you will not have a crispy crust.

Add potatoes and press down with a spatula. Cook 5 minutes, turn over, add a little more fat or oil if needed. Fry other side for an additional 5 minutes.

Place hash browns on warmed plates. These potatoes make a fine simple dinner served with eggs and applesauce.
